After talking about trying Pout for ages, I caught a monster whilst out in a boat last night. At about 2lb I decided to knock him on the head.
Although I didn't get any cod, my mate had 2. One at about 12lb and another about 4lb. He knidly gave me the fillets from the smaller one :cheers:
I've seen a few people on TV talking about Pout and claiming it to be under-rated so tonight I cooked them up. Nice and simple so I could taste the fish itself rather than a sauce or flavourings. grilled and plated up with some roasted vegetables. In my honest opinion I thought that the Pout had more flavour. I think I'll be keeping more in the future :chef: :ahhh: :drink:

Having recently tried and loved fresh caught cod, the next jumbo pout I catch is getting knocked on the head on the basis of this PJ!

Hugh fernley cooked a load up in batter and handed it out on the street. It went down a storm with the public. Cooked a good few up on the beach myself. Bloody lovey fish to eat!

No doubt about, Pout are tasty, though they don't beat sardines on the barby on the beach Dave.

If you are going to keep Pout for the pot then best thing you can do in my opinion is filletem on the beach as soon as you catch them(knock them on the head first tho or they dont keep still)and if you havnt had to climb down somewhere f******g lethal like Chale and can manage a cold box,whack the fillets in there - Pout and Whiting are two of the tastiest fish in the oggin

Can I suggest that cod is a bit like meat and needs to be kept for a day or so to get the best out of it? Three days is about right otherwise the fillets can be a bit watery. Keeping them in the fridge really improves both the texture and the taste.
Pout on the other hand needs to be eaten the day it was caught, a bit like mackeral.

Very true the best way do this is salt it or brine it. The easiest way is Just freeze it defrost done! That's what the commercial guys told me too do.

Pout and Whiting make a good base for a pie. Get a few fillets, put them at the base of a casserole dish, add sliced onions and sweetcorn. Cover with a cheese sause the finally top with mash potato, put in over at around Gas mark 6 for 35-40 minutes. Eat!
Another one is get some fillets, put some pepper and chilli powder on top and chuck under grill until done.
Once I've made a hot-smoker, I'll try a couple of fillets in there to see what they come out like.

I'm sold. Caught a few decent pout on the last trip and juct chucked them back. next time its whack, fillet, on the ice and we're away.
Hugh fernely whitlitstingthingy was on agaion tonight with put and gurnard - now gurnard i really like.
