Decided to try and eat them out of the bay, only one problem how to go about skinning the doggies. Whats the best way folks? Any recipies please.

If im struggling to strip the skin ALA nail on the door version,I tend to snip the fins off the bugger and cut through the skin either side of the spine (all one bone) and slid the blade around the spine and take off each flank ....then just lay it skin side down and slide the blade under the skin and extract each fillet off.

i saw that on tube too and the guy makes it look so easy. never tried it myself but looks simple enough.

Slit the belly under the chin to the Botty, rip the guts out and rinse. Score round the neck so the skin is broken, then nail it firmly through the top of the head into a plank of wood then use a pair of pliers to peel the skin back towards the tail. Works a treat just need a bit of time.

Worked on a boat with a nipper who used to work on a trawler. he made skinning them look like pulling the wrapper of a pepperami! Must have skinned thousands of them poor sod lol.

Slightly blanch in boiling water and skin is removed quite easly

I think he makes it look quite hard! there's no need to touch the guts, remove tail and fins, cut through body from neck to behind ass (guts come out in one), cut around head and heave skin off, cut fillet from head, done. like this... www.youtube.com/watch?v=Q_Sqv_v4V4U&feature=relatedi've done hounds and dogs like this on the beach, i always have a 4ft length of twine tied into an 18" long loop, loop it securely around the head and hook it over a groyne or even get a mate to hold it, doesn't matter if a 1lb doggie or a 5lb smoothy, they skin the same in about 2-3mins, quicker at home on a wooden bench with a hook but i can't be bothered disposing of the mess as home! Give this a try, spanner in the works, re skinning doggys, cut all fins off and gut run the knife down the middle of the back and the same underneath just under the skin just behind where you have cut the last fin off run the knife under the skin all round, make sure you leave the tail on, just lift the skin on one side behind where the last fin was, and skin towards the head, hang on to the tail and because you are skinning from thin end to thick, its easy , saves nailing to bit of wood etc, give it a try next time your skinning a few. To be honest I dont bother even trying to skin doggies. I just cut it into steaks, coat in seasoned flour and bake in the oven for 20 minutes. When it is cooked the skin just falls off just like any other fish and keeps the meat moist. If you are feeling adventurous add something a little extra to the flour. My favourite is Thai style with gound chilli, ground dry kaffir lime leaves, ground cumin and coriander powder.. Fantastic!

Just a note....If you are thinking of eating this fish to ease the conscience and plug the cod gap, think again...
Tastes lovely, but probably best not to eat this fish due to its reproductivity. The poor old Bull Huss and its sharky relatives (Rock Salmon, Smoothound and Dogfish) produce far less eggs (mermaid's purse) than other species of fish such as Pollack and Cod etc. so numbers take far longer to bounce back from any commercial fishing activity that perhaps nets large amounts of this fish family.
Probably best not eaten in large amounts, or not atall...
