Thought id hot smoke a couple of Cod fillets, made up a marinade of brown sugar, salt, ground black pepper, lemon juice, paprika, corianda, ginger & coated the fish. Hot smoked over Oak sawdust. Fillets took the smoke nicely, stayed moist & tasted lovely.
