Uncle snoops asked for some advice on a decent way to cook bream, thought i'd share them. 1.) First off dust a fillet in well seasoned flour and bake in a hot oven ( 180 - 200 degrees ) for 12 - 15 minutes. meanwhile fry some chopped garlic in butter, add a little white wine and drizzle over the fish just before serving. 2.) Finely chop some fresh basil, add lemon juice and a little melted butter to make a rough pesto, smear over the fillet and, once again, bake in a hot oven 180 - 200 degrees for 12 - 15 mins. 3.) Good old breadcrumbs! flour, egg and breadcrumb a fillet but mix the breadcrumb with dried oregano. You can either simply fry the fillet or seal it then finish in the oven. Simple yet spectacular
