Took advantage of the half price offer on the cod loins up tesco recently. Wrapped a portion in parma ham, lightly poached in milk then left to rest in a low heat oven, ( about 125 degrees ) with the leftover milk made a cheese sauce with a touch of english mustard, - delightful. This could work with any decent thick white fleshed fish
