A simple one for you to try, poach a selection of fishy bits in milk, ideally with a smoked fish of some description, ( pout are a cracking filler for this ) leave to one side, mash some spuds using the milk from poaching the fish, flake the meat into the mash with chives or tarragon, salt and pepper with a touch of soy sauce and mix the lot together. It's a delicious light snack especially served with a light salad and garlic/pesto bread
