Quite a simple one really, i fried off some fine diced onion, garlic and strips of bacon in a big lump of butter, added plain flour for the roux, slowly added milk till i got a nice thick sauce, plus cheese and english mustard to taste, poured over whiting fillets and finished in the oven for 20 mins on gas 6 Dished up with a tarragon mash, carrots and greens. Deeeee-lish
