As the Cod season is upon us, I seem to remember from my distant past that Cod and some other species are best eaten after they have been hung to drain for a day.
Cant remember exactly but I think we used to hang fish outside for a day or so back in the 50s.
Mind you we never had a fridge back then ,so that could have been the reason.
Can anyone who can shed some light on this, or did I imagine it?

They also tell me that the best way to cook Cod is pack them in salt and bake in the oven, but I have never had the nerve to try it.
Has anyone?

Never tried it myself TOF but i've seen it from the celeb chefs, they somehow create a salt crust all around the fish and bake the granny out of it, looks nice but fiddly....
