I wouldn't keep them in water mate, the temperature changes seem to kill them off quick. Just wrap them up in newspaper in 10's and keep somewhere cool. They also purge the sand out of themselves better this way

I keep mine as Lennox has said 15-20 worms per tray, change water every 2 days (or when i can be bothered ;D) just put a very shallow bit of water in, not even enough to completely cover them. They have to be in a fridge or as Adam said the temp change will kill them. If you have put whites in paper then they will probably have crawled out by tomorrow morning

if you wrap them, gut them on the beach, before you pick the up, simply roll the back of your fingers from about midway to the head, they then 'pop' at the head and loose most of their guts,
wash before leaving the beach (in sea water), when home, tip onto newspaper, and dry them by rolling them about between another sheet of paper, if you have a lot then to a handul at a time,
check the worms don't have too much fluid in them before wrapping, by gently runing your finger .tail to head,
when you wrap them, keep the heads all at one end, and when done stand upright in the fridge, i usually wrap ten per wrap, then 5 wraps per bundle, which then get wrapped chip shop style in another sheet of paper, this helps stop the worms drying out in the fridge, which they will do. i can use them for up to a couple of weeks like this,
if keeping fresh, keep then in shallow trays, kitty liter trays work, make sure the fridge isn't too cold, about 5 degs is more than cold enough, take home a load of sea water when you leave the beach, and change the water daily, keep the spare water in the same fridge or the shock will kill em. i have newspaper on the bottom of the tray to help absorb crap, they can keep up to a week like this, though normaly a few days is about your lot.
if they go too watery, then put them in newspaper (just a few sheets with a handful of worm) for a good few hours before you go, they'll stiffen up a bit then.
