They are are the best of all, but leave them for at least 24 hours before you cook them. Skate in Black Butter is the tops.

i love eating them as well,no bones to worrie about , just a cartlige. but dont both to keep one for the pot unless its over 6-7lb, cos the is a lot of waste on them and like anthony said leave them for 24+ hour or give um a good soking in fresh water over nite , as like all parts of the shark famile it can taste a bit too strong otherwise. cheers john

freezing them will get rid of the amonia too,like monkey nuts sais under 7lb aint worth keeping.I dont eat them my self after being put of by trying to eat a spotted ray many moons ago.My m8 from london loves them and is still getting through stevieboys 17lb ungie and love's it.What puts me of is the skinning. Steve's tasty ungie[so i am told]thou I would try again in black butter maybee!!

i do like skate yes but in my opinion rays are a quality fish. i couldnt bring my self to killing one after catching it. espcially an undulate or spotted... infact, any ray. ive always been facinated with them. they do make good eating though!
dont eat a fresh piece of skate. the best wasy to do it is to freeze it for a good few weeks to completely kill off the amonia in the flesh and. trust me. much better eating this way

would you have put this one back codfather2 22lb+ as I did ;D what a fish , nice to see it go i bet. iv only had a couple of ungies and both were about 5-7lb there patterns are so pritty. i only keep thornys cos thay are common around hear, the rest go back . but each to there own
