This is my own recipe for fish curry, very one thats tried it has said its delicious. 2 Large Onions (cut into large chunks) 1 tsp Black Mustard Seeds 1 Cinnamon Stick ( broken into small pieces) 3 Garlic Cloves ( finely chopped ) 1 inch piece of Fresh Ginger (finely chopped ) 2 Red Chillies or more depending to your taste ( finely chopped ) 1 tbs of Medium Curry Powder Juice of 1 Lemon 1 tin of Coconut Milk 1 tbs Plain Flour Salt and Pepper (good pinch) Fish stock cube (diluted into 5floz of boiling water ) Fresh Coriander Handful of frozen or fresh prawns Any large flaked fish such as (cod, hake or coley etc) First heat the oil, fry the Mustard seed, cinnamon and curry powder untill the mustard seed starts to pop, Add the onions, fry for a 2 to 3 minutes. Then add the Garlic, chillie & Ginger, cook for another minute, then add the Flour, cook this for i minute before adding the fish stock and coconut milk. continue to cook for another couple of minutes until the sauce thickens, if too thick add a bit more hot water. taste, if needed and salt and pepper. then add the fish and prawns. this only takes a couple of minutes, as not to over cook the fish. Add lemon juice and chopped fresh coriander. Plate up, sit back an ENJOY.
