Hi all, anyone got the name or webpage of some good quality knives/filleting tools. I'm after a filleting knife, a knife for going through bone and also a descaler. I'm after a reputable make as my wifes catering college knives are on thier last legs.

i dont think they still make them but the old storm (as in storm shads) knives are excellent, i've had mine for a good 4 years and with a regular sharpen he's as sharp as ever! they are the yellow handled ones. good as gold! but as i said i dont think you can still get em.

Apparantly ceramic is the way to go, but when they get blunt its a job to find someone to resharpen them for you

I'll happy sharpen it for you, location is bitch though.. you can buy a sharpener from most tackle shops now that fits on you box and has the correct angles pre-set, so you don't bugger your knifes up. other wise Victoroix are a good buy as already posted.

Mark, I wouldn't give you tuppence for the shop brought sharpeners. My knifes need different angles for different jobs but I dont think that you can sharpen Ceramic knifes with the same steel sharpeners that I use for my steel knifes, I'm not sure what they use, anyways thanks for the offer.

ceramic knifes do seem good light and dont rust and hold an edge longer second only to diamond edge but dont know where you would sharpen them or how good they are?.As for those ceramic sharpeners they are poo ruined both my buck knifes (£44 a pop) keep clear!!!!!!!!! Most stainless knifes are so soft they are crap only good for bait unless you go for the real hard stuff like global use which I have now. Andy

I ca't recomend Victorinox high enough.
i have the filet knife and use the boning knife to get through the backbones etc - great tools

I ordered some filleting knives from www.filleting-fish.com. Even though they were in Holland, the knives came in a couple of days and are superb. They're extremely sharp and a joy to use.

That descaler looks the biz, and that hand held sharpener did'nt seem to do his knife any harm, judging by the way he filleted that Bass after using it.

www.amazon.co.uk/AnySharp-ANYSHARP-Global-Knife-Sharpener/dp/B001DXVL6Ki ve got half a dozen knife sharpeners from diamond steels to chantrys but i am not good enough with the steels and i definatly believe some of my sharpeners actually blunt knives .Nick roberts is good with a stone however he picked up one of the above sharpeners from beaulie boat jumble .he told me it did a good job so i took all my stella sabatier knives round and he sharpened blunt knives in three pulls .i also took my bodem knives round and they are £50 each made of japanease steel ...all sharp as razors now cannot tell youhow impressed i was ...i now have two .i have bought the blue ones but will treat myself to the stainless steel one one fine day .....
